Bake It Until You Make It | Vanilla Cupcakes

This week I wanted to try something new. I’ve always loved to bake, but I’ve never made cupcakes from scratch. So when I got a vanilla cupcake from a shop in The Hague, I really wanted to recreate that one because it tasted so good! I used different websites and books to create my own recipe so here are the ingredients you will need for vanilla cupcakes a la Neeltje:

300 grams flour, 200 grams sugar, 125 grams butter, 120 ml milk, 2 tablespoons baking powder, 2 tablespoons vanilla extract, 1 egg and 1 tablespoon salt. Other things you will need are cupcakes cases and of course a cupcake/muffin tin.

First I started by measuring everything and after that I mixed the flour with the baking powder and the salt. Then I mixed the sugar with the butter until I didn’t have any more lumps of butter. In between mixing the sugar and butter I added one egg. When you are done with the sugar, butter and egg mixture just add that to the ‘dry’ ingredients bowl.

Baking

This was the point where I started mixing and found my mixture a little bit too dry for a cupcake mixture… And I was right because I forget the milk (stupid much?). First I started adding 50 ml at a time to see how the mixture would turn out and eventually I added about 120 ml. So with the milk you kind of have to guess how much you need. Just add a bit more little by little until you are happy with your mixture. Now the only ingredient left to add is vanilla extract, other wise these won’t be vanilla cupcakes…

You may think now: Why haven’t you pre heated the oven yet? Well, I hate pre heating the oven when I don’t know how long I will take preparing the mixture. So at this point I pre heated the oven at 180°C (200 is also okay).

Baking 2

I put the cupcake cases in the tin and after that I added the mixture to the cases. I added about a spoon full of mixture to the cases and you will have enough mixture for about 16 or 17 cupcakes (it depends on how big your cupcakes cases are). When the oven was pre heated, I put the first tray of cupcakes in and after about 20 minutes they were golden brown and delicious!

I chose not to decorate the cupcakes because I wanted to try them first, but you can always add some vanilla frosting on top if you want to. Let me know how you liked them if you tried my recipe!
