When it gets colder, I just feel like baking something. So I went on the Internet to look for some recipes with cinnamon and apples in it. I didn’t want to make little apple pies; I wanted to make cupcakes with an apple pie taste to it because that gives me a fall feeling. I couldn’t really find good recipes so I asked my mom and she gave me some tips. In the end the cupcakes turned out really great and I wanted to share my fall inspired cupcakes with you!
The ingredients that are needed for these cupcakes are: 125 grams flour, 125 grams butter, 125 grams crystal sugar, 2 tablespoons milk, 2 eggs, 1 tablespoon of vanilla extract, 1 tablespoon baking powder and 1 tablespoon cinnamon. To prepare the apples before adding them the cupcake mix you’ll need: 1 apple, 1 tablespoon cinnamon, some lemon juice and brown sugar. And of course the obvious things you’ll need: a cupcake tin and cupcake cases.
The first thing I did was preparing the apple. I wanted the apple to taste just like the apples in an apple pie. So what I did was cut the apple and slice it in tiny pieces. Then I put the apple pieces in a bowl.
Here I added the lemon juice, brown sugar and cinnamon to it. Here’s where you kind of have to how much you have to add but don’t add too much. If you are happy with what you added to the apple, just mix it together and put in the microwave for about 30 seconds to a minute. And then just put it to the side because you’ll add this later to your mixture.
Now let’s start with the mixture of the cupcakes. First mix the butter and crystal sugar together until it’s a smooth mixture. Then add the eggs one by one and mix them in with the mixture. After that I added in the dry ingredients like the flour and the baking powder. When that’s all mixed together the only two things you have to add are the milk and vanilla extract.
The only thing left to do is to add the apple we prepared earlier to this mixture and just mix it all together. I tasted the mixture at this point and I thought it could use some more cinnamon so I added one tablespoon of cinnamon to it. Then put the cases in the cupcake tin and fill the cases up with the mixture. Put the cupcakes in a pre heated oven at 180°C for about 20 minutes.
And we wait… But while waiting, make yourself a good cup of tea, a hot coco or a coffee and when you hear the oven peep, get a cupcake from the tin and enjoy it!
