Lunchtime Is The Best Time | Summer Lunch

When the summertime is finally here, I love to go out for some lunch with my friends or family. You can just sit outside in the sun while enjoying a lovely lunch, talk about life and fun things. But one thing I also like to do is create a perfect lunch at home. It’s a lot less expensive and even fun to make. I wanted to share one of my favorite (and also one of the easiest to make) lunch to eat in the summertime!

For creating this delicious summer lunch you’ll need: Some type of whole wheat bread, salmon (or slices of chicken breast if you prefer meat), herb butter, rocket salad, a glass of water, fruit and an ice cube mold.

First we’ll start off with the food part. I am the type of person that likes so many different types of bread but for this type of lunch I prefer just whole wheat bread. In restaurants they also serve this (if they even serve this at all) most of the time on a big baguette, which is also very tasty. Well okay, if you made the very difficult decision about what type of bread you’re going to use, you’ll need the herb butter. Spread the herb butter (as thick or as thin as you like) on your bread. You could also use garlic butter but I like herb butter better.

After you’ve spread the herb butter nice and evenly on your bread, it’s time to put on the salmon! In the summertime I really like salmon because gives this lunch a pretty fresh taste, which is lovely for in the summer. And to add a bit of a spice (it’s not really spicy but if you taste it, you know what I mean) to this lunch, I added some rocket salad on top. If you don’t like this, you could of course use a different type of lettuce but I think the rocket salad adds something extra to this whole lunch.

Now it’s time for the fun part (I think)! About a year ago I made a blog post with different types of fruit infused water. When it’s cold outside, I love to have a hot cup of tea but when the temperatures are getting higher, I love to have a nice cold glass of water. And what better way to spice up this boring glass of water than with some fruit?

This time I chose to do it a bit different from the fruit infused water because these are fruit ice cubes (I got this idea from Sheima on Eat Sleep Dress)! You just put the fruit (I used frozen raspberries and blueberries) in your ice cube mold, fill it with water and put in the freezer. Keep it in the freezer for a couple of hours and then put some ice cubes in your glass of water. It keeps your water cold and leaves a nice taste to your water. Perfect to drink with this lunch!

I think I eat this kind of lunch a lot because it’s so good. You can also change up some of the ingredients to make this a lunch to you’re liking. The fruit ice cubes are such a great thing to make because you can put them in your water at any time and it’s also possible to use so many different kind of fruits. Would you try this lunch?   2. The idea of using fruit in the ice is so fun! I love open sandwiches like this for lunch, too! I’ve been using olive oil and a dash of balsamic vinegar–I need to try your idea of herb butter! xo
