What better way to celebrate three years of blogging than with a confetti cake? 🍰 Well, there is no better way, I think. If you have missed what this is all about, in my Loves Lately blog post I talked about the fact that in April it is officially three years ago that I started blogging on Thoughts in Style. Of course this needs to be celebrated and that’s why I decided to bake a confetti cake. Since I can’t share a piece of cake online, I thought I would share the recipe so you are able to make one yourself for any type of celebration 🎉
For the cake you’ll need a couple of ingredients: 180 grams of flour, 175 grams of butter, 160 grams of crystal sugar, 3 eggs, 2 teaspoons baking powder, 1 teaspoon vanilla extract and 1, a half tablespoons of milk and a pinch of salt. Besides these ingredients, you’ll also need some other things, like a baking sheet, a cake tin (I used this PME one, which is ∅15×10 cm) and a bit of butter and flour to grease the cake tin. Btw, the recipe I used is from Linda Lomelino and her cookbook called “Zoet & Shoot!“.
Since we are making a confetti cake, we will also need some things to decorate as well. Of course you need buttercream to put on top of the cake. If you plan on making a multiple teared cake (like I did), you’ll also need some strawberry jam to add to the inside of the cake. You can make all of these things yourself, or you just buy them pre made at the store (like I did) if you don’t feel like making these yourself. Lastly, you’ll of course need lots of sprinkles. Make sure you know what part of the cake you want to cover in sprinkles so you know how much sprinkles you’ll need.
After you’ve greased your cake tin (don’t forget to measure a baking sheet and put it in the bottom of the tin), it’s time to start with the recipe. But stop. First put on your oven at 175 °C because it needs to be warm when you put your cake in. Now you need to mix the flour, baking powder and pinch of salt in a bowl. Then grab another bowl because in this one you’ll mix the butter, sugar and vanilla extract. I would recommend to use a mixer since you need to mix it together for about five minutes. Add the eggs to it one by one and keep mixing. When all three eggs are in, you can add the dry ingredients you’ve just mixed together in the other bowl. I would recommend not pouring it in all at once, just add a little and mix it with the rest. Just mix it until you are happy with the result. It should look something like the photo above and then add it to the cake tin.
The cake needs to be in the oven for about 40 to 50 minutes. It kind of depends on your oven. When it’s done, let the cake cool off in the tin at first and then get it out and let it cool completely on a wire rack (like the one I used in the photo above). I chose to cut my cake in half (horizontal not vertical of course) and put spread some jam in the cake to spice it up a little. When you’ve added the jam, put the cake back together to start with the buttercream.
Since I am lazy, I chose to buy a mix for buttercream so I only had to add 100 grams of butter and 125 ml of milk. First the butter has to be beaten until it’s soft and then add the buttercream mix and milk. Now mix everything until it looks smooth and doesn’t have any lumps of butter in it anymore. I used a knife to add the buttercream on top of the cake and spread it out evenly. Since I chose to make a confetti cake, the buttercream didn’t have to look very neat. When the whole cake is covered with buttercream, you can add the sprinkles. This is a pretty messy part so I would suggest doing this with some type of plate underneath so this will catch all of the sprinkles that don’t get on the cake. And then there’s only one thing left to do, add a cake topper! I made mine myself and you can find the printables here.
Above you can see the end result of the confetti cake and I absolutely love it. I haven’t made a ‘real’ cake from scratch before but I will definitely try to make more like these. Maybe even a drip cake (which are freakin’ hard to make so yeah)? But for now this is/was a great cake to celebrate three years of blogging with.
